Massaging Kale? Did I Read That Right?

Yes, massaging kale is an important step in making a delicious kale salad. Kale is a tough leafy green that can be bitter and hard to digest if not prepared properly. Massaging the kale with your hands helps to break down the tough fibers and soften the leaves, making it easier to eat and enjoy. It also helps to bring out the natural sweetness of the kale, which pairs well with the other flavors in the salad. So, make sure to massage your kale before adding the other ingredients to make the perfect kale salad.

Ingredients

  • 1 large bunch of kale, stemmed, chopped, and massaged
  • 1 medium apple, thinly sliced
  • 1/2 cup crumbled goat cheese
  • 1/2 cup chopped pecans
  • 1/4 cup olive oil
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon Dijon mustard
  • 1 tablespoon honey
  • Salt and freshly ground black pepper

Directions

1. In a large bowl, combine the kale, apple slices, goat cheese, and pecans.

2. In a small bowl, whisk together the olive oil, apple cider vinegar, Dijon mustard, honey, salt, and pepper.

3. Drizzle the dressing over the kale salad and toss to coat.

4. Serve immediately or refrigerate until ready to serve.
