10 Minute Whole Wheat Tortilla Pizza

Sometimes you just want a pizza. Sometimes you just don't want to spend the money on a 12in pizza that is a whopping $15. Or, sometimes you want to eat more than just two slices of pizza without feeling guilty.

Why you'll love this recipe

This recipe is seriously great in a pinch when you don't feel like cooking and having to clean up dishes. I really like pizza. However, I know if I order a pizza from a restaurant I can easily consume their personal sized pizza. The problem is I realize how much calories and fat I consumed and then I feel bad for eating something that I really enjoy. This recipe is one of my staple "college kid" recipes because I feel satisfied from eating pizza without the guilt. It also is not bad on the health side. When you use all of the ingredients in my list, it ends up being about 300 calories with 18g of protein and 26g of carbohydrates. The biggest thing to watch out for is the saturated fat from the cheese. There is only about 7g of saturated fat per pizza if you utilize 1/2 cups of part skim mozzarella. This can be compared to a personal pan pizza from a pizza restaurant being 600 calories and 10g of saturated fat. Regardless of calories and macronutrients, this recipe helps with portion control. I do not feel like reheating the oven and remaking a tortilla pizza once I have sat down and eaten one pizza.

I also recommend making this with kids! They can be hands on in this recipe by putting on whatever toppings they want.

How to make this recipe

My biggest tip is that if you are putting any veggies on that are not equivalent to light leafy green (such as spinach), you should saute them ahead of time. I love mushrooms and onions on my pizzas but I make sure to cook them on medium-high heat for 5-8 minutes prior to putting it on my pizza. Same thing goes for bell peppers and other thicker vegetables. Also, take the pizza it according to how much you like it crispy. Sometimes I keep it in a little longer than 12 minutes because I enjoy that crunch and browned cheese. Just be sure to take it out before the tortilla burns around the edges.

Substitutions and Additions

Add anything you like! I like to make Hawaiian-inspired chicken pizza. You literally could do anything you want. Like I said, in order to watch the saturated fat content, be sure to use part skim mozzarella. If you need to watch your carbohydrates due to a health concern then look into the carb control tortillas at stores like Walmart. I like the mission carb balance whole wheat tortillas. Those are very high in fiber!

Ingredients

  • 1 large whole wheat tortilla
  • 1/2 cup part skim mozzarella
  • 3 Tbsp. marinara sauce
  • Handful of fresh or frozen spinach

Directions

  1. Arrange oven rack to the center of the oven
  2. Preheat oven to 425°F
  3. Spread marinara sauce on tortilla
  4. Lay spinach randomly on top of the marinara sauce
  5. Sprinkle with mozzarella cheese
  6. Put tortilla pizza on a nonstick cookie sheet
  7. Put cookie sheet in preheated oven and cook for 10-12 minutes, or until cheese is lightly browned
