Spaghetti Pomodoro is a classic Italian pasta dish that celebrates the simplicity and freshness of its ingredients. It features al dente spaghetti tossed in a light tomato sauce made from ripe, sweet tomatoes, gently simmered with garlic and olive oil. Fresh basil adds a fragrant, herbal note that perfectly complements the sauce, creating a bright and flavorful dish. It's a straightforward, comforting meal that highlights how a few quality ingredients can come together to create something truly delicious.

Ingredients

  • 1 1/2 packages (about 24 oz) spaghetti
  • 3 cloves garlic, crushed
  • 1/2 cup olive oil
  • 3 cans (14.5 oz each) pomodorini (cherry tomatoes in sauce) or substitute with diced tomatoes
  • Fresh basil leaves, to taste
  • Salt, to taste
  • Directions

    1. Bring a large pot of salted water to a boil. Add the spaghetti and cook according to package instructions until al dente.
    2. Once cooked, drain the spaghetti and rinse it under cold water to stop the cooking process. Set aside.
    3. While the spaghetti is cooking, heat 1/2 cup of olive oil in a large skillet over low heat.
    4. Add the crushed garlic and a pinch of salt to the oil. Let it simmer gently until the garlic becomes fragrant, about 2-3 minutes. Be careful not to let the garlic brown.
    5. Add the 3 cans of pomodorini (or diced tomatoes) to the skillet with the garlic. Increase the heat to medium-low and allow the sauce to simmer for about 10-15 minutes until it reduces and thickens slightly. Stir occasionally.
    6. Taste the sauce and add additional salt if needed.
    7. Once the sauce has reached your desired consistency, tear or chop fresh basil leaves and stir them into the sauce. Let it simmer for an additional 2 minutes to infuse the flavor.
    8. Add the cooked spaghetti to the skillet with the sauce, tossing until the pasta is well coated with the sauce.
    9. Garnish with extra basil and a drizzle of olive oil if desired. Serve hot with grated Parmesan cheese on the side.
