Spaghetti Pomodoro is a classic Italian pasta dish that celebrates the simplicity and freshness of its ingredients. It features al dente spaghetti tossed in a light tomato sauce made from ripe, sweet tomatoes, gently simmered with garlic and olive oil. Fresh basil adds a fragrant, herbal note that perfectly complements the sauce, creating a bright and flavorful dish. It's a straightforward, comforting meal that highlights how a few quality ingredients can come together to create something truly delicious.

- Bring a large pot of salted water to a boil. Add the spaghetti and cook according to package instructions until al dente.
- Once cooked, drain the spaghetti and rinse it under cold water to stop the cooking process. Set aside.
- While the spaghetti is cooking, heat 1/2 cup of olive oil in a large skillet over low heat.
- Add the crushed garlic and a pinch of salt to the oil. Let it simmer gently until the garlic becomes fragrant, about 2-3 minutes. Be careful not to let the garlic brown.
- Add the 3 cans of pomodorini (or diced tomatoes) to the skillet with the garlic. Increase the heat to medium-low and allow the sauce to simmer for about 10-15 minutes until it reduces and thickens slightly. Stir occasionally.
- Taste the sauce and add additional salt if needed.
- Once the sauce has reached your desired consistency, tear or chop fresh basil leaves and stir them into the sauce. Let it simmer for an additional 2 minutes to infuse the flavor.
- Add the cooked spaghetti to the skillet with the sauce, tossing until the pasta is well coated with the sauce.
- Garnish with extra basil and a drizzle of olive oil if desired. Serve hot with grated Parmesan cheese on the side.
