This ham casserole is a comforting, tried-and-true recipe that’s been passed down through the family. Originally my mother-in-law’s mom’s recipe, my MIL added her own tweaks over the years, and it's become a dish I always look forward to after a long drive to see them in Kansas. With savory ham, tender pasta, a hint of bell pepper, and just the right amount of sharp white cheddar, it’s simple, warm, and incredibly satisfying. It’s the kind of meal that feels like a hug on a plate.

Ingredients

  • 2 cups cubed ham
  • 1/4 cup red bell pepper
  • 1/4 cup green bell pepper
  • 1 1/2 cup rotini pasta
  • 1/4 cup milk
  • 1 1/2 cup shredded sharp white cheddar

Directions

  • Preheat your oven to 350°F (175°C).
  • In a large pot, boil the rotini pasta according to the package directions until al dente. Drain and set aside.
  • In a large mixing bowl, combine the cooked pasta, cubed ham, diced red and green bell peppers, milk, and 1 cup of the shredded sharp white cheddar cheese. Mix until well combined.
  • Pour the mixture into a greased 9x9-inch baking dish and spread it out evenly.
  • Sprinkle the remaining 1/2 cup of shredded cheddar cheese evenly over the top of the casserole.
  • Place the baking dish in the preheated oven and bake for 30 minutes, or until the cheese is melted and bubbly, and the casserole is heated through.
  • Let the casserole cool for a few minutes before serving.
