Ingredients

  • 3-4 lb beef roast
  • 1 cup beef broth
  • 1/2 cup red wine
  • 2 tbsp Worcestershire sauce
  • 2 tbsp tomato paste
  • 4 garlic cloves, minced
  • Fresh herbs (rosemary, thyme)
  • 1-2 tbsp cornstarch (for slurry)
  • Directions

    1. Sauté the roast on high in the Instant Pot, browning all sides. Remove.
    2. Deglaze with red wine, scraping up bits.
    3. Add beef broth, Worcestershire, tomato paste, garlic, and herbs. Stir well.
    4. Return roast to the pot, seal, and cook on “Pressure Cook” for 60-75 minutes.
    5. Once done, remove roast and set to “Sauté” mode. Mix cornstarch with water to form a slurry, stir into the liquid, and cook until thickened into gravy.
    6. Serve with mashed potatoes and greens like broccoli or salad.
