Mushroom Onion Breakfast Burrito

Ingredients
- 1/2 cup baby bella mushrooms
- 1/2 cup yellow onions, diced
- 1 tsp. Garlic
- 1/2 avocado, sliced
- 1 mission carb balance whole wheat tortilla
- 3 eggs, beaten
- 1 tsp. monosodium glutamate (MSG)
- Handful of spinach
- Sprinkle of cheese of your choice
- Drizzle of sriracha
- 1 tsp. pepper
- 1 Tbsp. olive oil
Directions
1. Heat olive oil in saute pan on medium heat
2. Once oil is hot, add mushrooms, onions, and garlic; saute until browned, about 8-10 minutes
3. Set cooked mushrooms and onions aside
4. Crack 3 eggs in a small bowl
5. Add pepper and MSG to the egg mixture; mix well
6. Add eggs to a hot pan on medium heat
7. Immediately top with handful of spinach and cheese sprinkle
8. Constantly stir eggs so they do not burn and stick to the bottom of the pan
9. Once eggs are scrambled and seem dry (not gooey and runny), about 5 minutes, set aside
10. Lay tortilla out and begin by putting avocado slices in the middle
11. Next put the mushroom mixture in the middle, followed by the eggs
12. Drizzle some sriracha on top

14. Heat pan on medium-high
15. When pan is hot, Put burrito on pan with the seam side down; heat burrito for 3 minutes per side. Enjoy!
