Do you ever find yourself just so hungry between meals? This recipe is perfect for those times. It offers protein and fiber which will both help you feel fuller for longer. It is also super easy to make and tastes amazing!

Ingredients

  • 1 cups all purpose white flour
  • 1 cup whole wheat flour
  • 1/4 cup chia seeds
  • 3 scoops vanilla whey protein powder
  • 1/2 tsp baking soda
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup Greek yogurt
  • 1/2 cup skim milk
  • 1/4 cup maple syrup, honey, or agave
  • 2 eggs
  • 1 tsp vanilla extract
  • 1 very ripe banana, mashed or mixed berries

Directions

1. Preheat oven to 350°F and line a muffin tin with 12 muffin cups.

2. In a large mixing bowl, whisk together the flour, chia seeds, protein powder, baking soda, baking powder, and salt.

3. In a separate mixing bowl, whisk together the Greek yogurt, milk, syrupy sweetener, eggs, mashed banana and vanilla extract until smooth.

4. Pour the wet ingredients into the dry ingredients and mix until well combined.

5. Divide the batter into the muffin cups, filling each one about 3/4 full.

6. Bake for 20-25 minutes, or until the tops are golden brown and a toothpick inserted into the center comes out clean.

7. Allow the muffins to cool for 5 minutes in the pan before transferring them to a wire rack to cool completely.

8. Serve the muffins as a high protein snack or breakfast option. Enjoy!
