Ingredients

  • 1 large sweet potato, peeled and cubed
  • 1 can black beans, drained and rinsed
  • 1 can diced tomatoes (with juice)
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 2 cups vegetable broth
  • 1 tbsp chili powder
  • 1 tsp cumin
  • 1/2 tsp smoked paprika
  • Salt and pepper to taste
  • Optional: diced avocado, sour cream, fritos, cilantro, lime for garnish
  • Directions
