Why is this a good alternative?
Mashed cauliflower is a lower-carb, lighter option compared to traditional mashed potatoes, making it ideal for those looking to reduce calorie or carbohydrate intake. It’s also high in fiber, vitamin C, and antioxidants, while still offering a creamy, buttery texture similar to potatoes.

Additions/Substitutions:

  • Swap heavy cream for Greek yogurt or cream cheese for extra tang. Or add a little sour cream to my recipe and reduce the amount of heavy cream put in.
  • Add roasted garlic for more flavor.
  • Add parmesan cheese for a rich, cheesy twist.
  • Top with or mix in chives for an oniony touch!

Ingredients

  • 1 large head of cauliflower, cut into florets
  • 1/4 cup heavy cream
  • 2 tbsp unsalted butter
  • 1/4 tsp ground nutmeg
  • Salt and pepper to taste
  • Directions

  • Steam cauliflower florets until tender, about 10-12 minutes.
  • Drain well to remove excess moisture. I recommended using sieve and push the cauliflower into it to try to get the water out. Be careful not to burn yourself.
  • In a food processor, blend cauliflower with cream, butter, nutmeg, salt, and pepper until smooth.
  • Adjust seasoning and serve!
